As weeks go by, we continuously work hard. More and more people are finding out about the restaurant and the busier we get. Fridays look like a "normal" restaurant, we're busy for lunch and slammed for dinner! It's the end of the week, but for me it feels like the beginning of excitement, constant movement, and at the end of the day there is nothing better that printing our final days report on just how well we did. Seeing familiar faces day after day reminds us how satisfied they truely are with everything we've built up...encouragement to stick it out, suck it up, and keep producing good food! The best feeling comes from those who have never been here before and aren't even sure how they got here, but a few days later, after conversing and having tried what we have to offer, they come back and try something new. Seeing those first-timers again the second time and then the third, you know you've done your job right!
I'm lucky! I've started this business with my brother. Though we may argue and fight as any brother and sister would do, we know we have to overcome those challenges, better ourselves from them, and be stronger when we walk back out into the real world. We push each other to make things better, to make our food taste better, and our business run better!
